This Coconut Bun is a Winner!

In recent years, food manufacturers have responded well to people with special dietary needs: “Free From” sections often have gluten or milk-free options; I am now seeing kefir yoghurt, lentil crisps and veggie wraps, not overlooking quails eggs and xylitol!

But my most recent, best (and flavoursome) encounter was with Calvin's coconut flour bread (actually buns) – the texture is unbelievably soft and the taste is neutral enough to make them a perfect match to olive spread, pesto, nut butter or even an egg. Keep fingers crossed that Sabine’s creative bakery produces more useful alternative foods for all those struggling with gluten and many other undiagnosed food intolerances!
